- Pork sausage, left whole1.3 lb
- Potato, peeled and cut into chunks2 lb
- Onion, thinly sliced1 large
- Butter3 tbsp
- Whole milk0.5 cup
- All-purpose flour2 tbsp
- Beef broth1.5 cups
- Dijon mustard2 tsp

On a cutting board, peel and cut the potato into chunks and thinly slice the onion.

Boil and mash
Boil the potato in a large pot of water over high heat until tender; drain, then mash with 30 g butter, whole milk, 1/2 tsp salt, and a few grinds of black pepper.

Arrange the pork sausage in a large skillet over medium heat and turn every few minutes.

Move the pork sausage to a plate; cook onion with the remaining butter in the skillet over medium-low heat, stir in flour, then whisk in beef broth and dijon mustard until glossy and thick.
