Ingredients

  • Turkey breast, cut into 2 cm pieces1 lb
  • Farro1.25 cups
  • Cremini mushroom, sliced8 oz
  • Onion, diced1 small
  • Garlic, minced3 cloves
  • Chicken broth3 cups
  • White wine0.5 cup
  • Olive oil1 tbsp
  • Thyme, leaves stripped1 tsp
  • Parmesan cheese, finely grated1.5 oz

Method

    Prep the skillet ingredients

    On a cutting board, cut the turkey into 2 cm pieces, slice the mushrooms, dice the onion, mince the garlic, strip the thyme leaves, and finely grate the parmesan.

    Brown the turkey

    In a large deep skillet over medium-high heat, warm the olive oil; add the turkey and turn the pieces until golden on several sides, seasoning with 1/2 tsp salt and black pepper.

    Brown the mushrooms

    In the same skillet over medium-high heat, add the cremini mushroom and onion; stir occasionally, then stir in the garlic and thyme.

    Stir the farro into the skillet over medium heat until coated and faintly nutty; pour in the white wine and stir until most of it has evaporated.

    Simmer until tender

    Add the chicken broth and browned turkey to the skillet, cover, and simmer over low heat, stirring twice.
