  • Pork tenderloin, cut into 3 cm pieces1.4 lb
  • Tomatillo, quartered1 lb
  • Poblano pepper, diced1 large
  • Onion, diced1 medium
  • Garlic, minced2 cloves
  • Chicken broth1 cup
  • Corn tortilla8 small tortillas
  • Cilantro, chopped0.5 cup

    Prep ingredients

    Cut the pork tenderloin into 3 cm pieces, quarter the tomatillo, dice the poblano pepper and onion, mince the garlic, and chop the cilantro.

    Brown the pork

    Heat a large deep skillet over medium-high heat with a little oil. Add the pork tenderloin, season with 1/2 tsp salt and a few grinds of black pepper, and turn the pieces to brown several sides.

    Soften the vegetables

    Add the onion, poblano pepper, and garlic to the large deep skillet over medium heat. Stir frequently.

    Simmer with tomatillo

    Stir in the tomatillo and chicken broth, cover the large deep skillet, and simmer over medium-low heat, stirring once or twice.

    Tip: If the sauce thickens before the pork is tender, lower the heat and add a splash of broth.

    Rest the pork

    Let the pork rest in the covered skillet off the heat.

    Taste and serve

    Taste and adjust with salt and black pepper. Sprinkle with cilantro and serve with warm corn tortilla for scooping up the tomatillo sauce.
