  • Couscous1.5 cups
  • Apple, cored and cut into small dice2 medium
  • Onion, finely diced1 medium
  • Chicken broth1.5 cups
  • Butter2 tbsp
  • Sage, finely chopped1 tbsp
  • Olive oil1 tbsp

Zubereitung

  1. 1

    Prep the ingredients

On a cutting board, pat the pork chops dry; core and dice the apple, finely dice the onion, and finely chop the sage.

  2. 2

    Start the couscous

Bring the chicken broth and butter to a boil in a medium saucepan over high heat. Stir in the couscous and cover.

    5 Min.
  3. 3

    Steam the couscous

Remove the covered saucepan from the heat and leave it covered for 5 minutes.

    5 Min.

Tipp: Keep the lid on while the couscous steams.

  4. 4

    Brown the chops

Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with 1/2 tsp salt and a few grinds of black pepper, then sear, turning once, for 8–10 minutes.

    10 Min.

Tipp: Use a thermometer at the thickest part; thin chops may finish sooner.

  5. 5

    Cook the apple

Transfer the pork to a plate. Add the onion and apple to the same skillet over medium heat and stir often for 5–7 minutes; fold in the sage for the final minute.

    7 Min.
  6. 6

    Fluff and serve

Fluff the couscous with a fork and spoon it onto plates with the pork chops and apple mixture. Taste and adjust with salt and black pepper before serving.
