  • Pork sausage, casings removed1 lb
  • Great northern bean, drained and rinsed2 15 oz cans
  • Carrot, diced2 medium
  • Onion, diced1 medium
  • Canned diced tomato1 14.5 oz can
  • Chicken broth1 cup
  • Breadcrumb1 cup
  • Thyme, leaves stripped1 tsp
  • Olive oil1 tbsp

Method

    Prep the ingredients

    On a cutting board, remove the sausage casings, drain and rinse the beans, dice the carrot and onion, and strip the thyme leaves.

    Brown the sausage

    Heat the olive oil in an oven-safe skillet over medium-high heat. Crumble in the sausage and cook, breaking it up with a spoon.

    Add the carrot and onion to the skillet over medium heat. Stir and scrape the bottom.

    Stir the great northern beans, canned diced tomato, chicken broth, and thyme into the skillet. Season with 1/2 tsp salt and 1/4 tsp black pepper; simmer over medium-low heat.
