French-Inspired Cod & Potato-Leek Stew

Ingredients
- Cod fillet, cut into 4 cm chunks1.5 lb
- Potato, cut into 2 cm cubes1.3 lb
- Leek, white and pale green parts sliced and rinsed2 medium
- Carrot, diced1 large
- Chicken broth3.75 cups
- Heavy cream1 2 cup
- Parsley, chopped2 tbsp
- Butter2 tbsp
- Bay leaf, leave whole1 leaf
Method

Prep the ingredients
On a cutting board, cut the cod into chunks, cube the potato, slice and rinse the leek, dice the carrot, and chop the parsley.

Soften the leeks
Melt the butter in a large pot over medium heat. Add the leek and carrot, season with 1/2 tsp salt and 1/4 tsp black pepper, and stir until softened.

Simmer the potatoes
Add the potato, chicken broth, and bay leaf to the pot. Bring to a boil over high heat, then reduce to medium-low and simmer.

Poach the cod
Stir in the heavy cream and gently place the cod chunks into the pot. Simmer over low heat without stirring hard.

Taste and serve
Remove the bay leaf and stir in the parsley. Taste the stew and add up to 1/4 tsp salt and a few grinds of black pepper if needed.
