Ingredients

  • Ground beef, broken up during cooking1.2 lb
  • Eggplant, cut into 2 cm cubes1 large
  • Canned crushed tomato1 14 oz can
  • Onion, diced1 medium
  • Garlic, minced4 cloves
  • Olive oil2 tbsp
  • Cinnamon0.25 tsp
  • Oregano, measured1 tsp
  • Feta cheese, crumbled4 oz
  • Parsley, chopped2 tbsp

Method

    Prep the vegetables

    Cut the eggplant into 2 cm cubes, dice the onion, mince the garlic, chop the parsley, and crumble the feta cheese on a cutting board.

    Brown the eggplant

    Heat half the olive oil in a large skillet over medium-high heat. Add the eggplant with 1/4 tsp salt and cook, turning the cubes now and then.

    Tip: Cook in batches if the cubes form more than one loose layer.

    Cook the beef

    Transfer the eggplant to a plate. Add the remaining olive oil and onion to the skillet over medium heat, stir until soft, then add ground beef, garlic, cinnamon, oregano, 1/2 tsp salt, and black pepper; break up the beef as it browns.

    Simmer the tomato

    Stir the canned crushed tomato and eggplant into the skillet. Simmer over medium-low heat, stirring occasionally.

    Bake with feta

    Spoon the skillet mixture into a baking dish, scatter the feta cheese over it, and bake at 200°C.

    Taste and serve

    Taste the bake and adjust with salt and black pepper. Scatter the parsley over the top and serve warm.
