  • Couscous1.5 cups
  • Cucumber, finely diced1 medium
  • Greek yogurt0.75 cup
  • Onion, finely grated0.5 medium
  • Garlic, minced2 cloves
  • Parsley, chopped0.25 cup
  • Oregano, measured1 tsp
  • Lemon, juiced0.5 large
  • Olive oil1.5 tbsp

    Grate the onion, mince the garlic, chop the parsley, dice the cucumber, and juice the lemon. In a mixing bowl, combine the lamb, onion, garlic, half the parsley, and oregano; season with salt and pepper.

    Shape the meatballs

    Roll the lamb mixture into 16 evenly sized balls with lightly damp hands and arrange them on a plate.

    Bring 375 ml water and 1/4 tsp salt to a boil in a medium saucepan over high heat.
