Ingredients

  • Ground turkey, broken into small pieces1.1 lb
  • White rice, rinsed1.25 cups
  • Black bean, drained and rinsed1.5 cups cooked
  • Canned tomato with green chili1 14 oz can
  • Chicken broth1.7 cups
  • Onion, diced1 medium
  • Chili powder2 tsp
  • Monterey jack cheese1 cup shredded
  • Cilantro, chopped0.5 cup

Method

    Prep ingredients

    Rinse the white rice, drain and rinse the black bean, dice the onion, and chop the cilantro.

    Brown the turkey

    Heat a large deep skillet over medium-high heat with a little oil. Add the ground turkey and onion; break up the turkey and stir often, seasoning with 1/2 tsp salt and a few grinds of black pepper.

    Toast the rice

    Stir the white rice and chili powder into the large deep skillet over medium heat.

    Simmer until tender

    Stir in the black bean, canned tomato with green chili, and chicken broth. Cover and simmer over low heat without stirring.

    Tip: If the rice is still firm and the skillet is dry, add a small splash of broth and continue covered.

    Melt and serve

    Scatter monterey jack cheese and cilantro over the skillet, cover for a minute, then taste and adjust with salt and black pepper.
