- Polenta1.25 cups
- Chicken broth3.75 cups
- Cheddar cheese, shredded1 cup shredded
- Scallion, thinly sliced3 stalk

- Lemon, cut into wedges1 medium

Prep the ingredients
Peel and devein the shrimp, shred the cheddar cheese, thinly slice the scallion, and cut the lemon into wedges; set out the remaining ingredients.

Cook the grits
Bring the chicken broth to a simmer in a medium saucepan over low heat; whisk in the polenta, then cook, stirring often.

Season and cook shrimp
Melt half the butter in a large skillet over medium-high heat; add shrimp, smoked paprika, 1/2 tsp salt, and a few grinds of black pepper, turning once.

Stir the cheddar cheese and remaining butter into the saucepan over low heat until smooth, then fold in half the scallion.
