Ingredients

  • Cod fillet, cut into 4 portions1.3 lb
  • Jasmine rice1.5 cups
  • Canned coconut milk0.5 15 oz can
  • Ginger, finely grated1 tbsp
  • Garlic, minced3 cloves
  • Lime, juiced2 medium
  • Fish sauce1 tbsp
  • Scallion, thinly sliced2 medium
  • Canola oil1 tbsp

Method

  1. 1

    Prep the ingredients

On a cutting board, cut the cod into four portions, finely grate the ginger, mince the garlic, juice the limes, and thinly slice the scallion.

Tip: Pat the cod dry before cooking so the sauce clings to it.

  2. 2

    Cook the rice

In a medium saucepan, combine the jasmine rice with 600 ml water and bring to a boil over high heat; cover, reduce to low, and cook.

  3. 3

    Warm the aromatics

Heat the canola oil in a large skillet over medium heat. Add the ginger and garlic and stir constantly.

    3 min

Tip: Garlic can burn quickly, so have the coconut milk ready to add.

  4. 4

    Simmer the cod

Pour the coconut milk, fish sauce, and lime juice into the skillet over medium-low heat and bring to a gentle simmer. Add the cod and spoon sauce over it.

    9 min

Tip: Keep the sauce at a gentle simmer; boiling can break the fish into small pieces.

  5. 5

    Taste and serve

Taste the sauce and adjust salt and black pepper. Spoon the cod and sauce over the rice, then scatter the sliced scallion over the bowls.

Tip: Bring extra lime to the table for anyone who likes a sharper finish.
