  • Pork tenderloin, cut into thin strips1.3 lb
  • White rice1.4 cups
  • Butter lettuce, separated into leaves and washed1 head
  • Cucumber, cut into thin half-moons1 medium
  • Garlic, minced3 cloves
  • Ginger, finely grated1 tbsp
  • Soy sauce3 tbsp
  • Rice vinegar1 tbsp
  • Sesame oil1 tbsp
  • Scallion, thinly sliced2 stalks
  • Sesame seed2 tsp

Method

    Prep the wraps

    On a cutting board, separate and wash the butter lettuce leaves, slice the pork into thin strips, cut the cucumber into half-moons, mince the garlic, grate the ginger, and slice the scallion.

    Tip: Use a clean board and knife after handling raw pork.

    Cook the rice

    Combine the white rice and 470 ml water in a covered medium saucepan; simmer over low heat.

    Season the pork

    In a mixing bowl, stir the soy sauce, rice vinegar, garlic, and ginger together, then toss in the pork until evenly coated.

    Heat sesame oil in a large skillet over medium-high heat; add pork in a single layer and stir-fry until browned and just cooked through.
