  • Jasmine rice1.5 cups
  • Cucumber, sliced into half-moons1 medium
  • Peanut butter6 tbsp
  • Soy sauce2 tbsp
  • Lime, juiced1 medium
  • Ginger, finely grated1 tbsp

    On a cutting board, cut the chicken into bite-size strips, slice the cucumber into half-moons, juice the lime, and finely grate the ginger.

    In a medium saucepan, combine the jasmine rice with 600 ml water and bring to a boil over high heat; cover, reduce to low, and cook.

    In a mixing bowl, stir the peanut butter, soy sauce, lime juice, ginger, and 60 ml warm water together.
