Season pork chops with 1/2 tsp salt and a few grinds of black pepper; heat olive oil in a large skillet over medium-high heat and turn chops once.

Move pork to a plate; add butter, cabbage, onion, apple, and sage to the skillet over medium heat, stirring often.
