Ingrédients

  • Beef flank steak, thinly sliced across the grain1.2 lb
  • Rice noodle10.5 oz
  • Broccoli, cut into small florets1 large head
  • Scallion, sliced3 stalks
  • Garlic, minced2 cloves
  • Ginger, finely grated1 tbsp
  • Soy sauce4 tbsp
  • Hoisin sauce2 tbsp
  • Sesame oil1 tbsp
  • Cornstarch1 tbsp

    Prep and soak noodles

    Thinly slice beef across the grain, cut broccoli into small florets, slice scallion, mince garlic, and grate ginger; soak rice noodles in hot water according to the package.

    Mix the pan sauce

    Whisk soy sauce, hoisin sauce, cornstarch, and 60 ml water in a large bowl; set it beside the wok.

    Sear the beef

    Heat sesame oil in a wok over high heat; spread beef in a single layer, turn once, and stir-fry with 1/2 tsp salt and a few grinds of black pepper.

    Stir-fry the broccoli

    Add broccoli, garlic, ginger, and scallion to the wok over high heat; toss and stir often.

    Add drained noodles and the soy mixture to the wok over medium-high heat; toss, then taste and adjust salt and black pepper before serving.
