German Sausage, Potato & Cabbage Skillet

Sliced sausage, tender potatoes, and sweet cabbage cook together for a hearty dinner inspired by German comfort food. A little mustard at the end adds tang without making the dish spicy.

Ingrédients

  • Pork sausage, cut into thick coins1 lb
  • Potato, cut into 2 cm cubes4 medium
  • Green cabbage, thinly sliced0.5 medium head
  • Onion, thinly sliced1 medium
  • Chicken broth1 cup
  • Yellow mustard1 tbsp
  • Canola oil1 tbsp
  • Apple cider vinegar1 tbsp

Préparation

    Prep the skillet

    Cut the pork sausage into coins, cube the potato, slice the cabbage, and thinly slice the onion.

    Brown the sausage

    Warm the canola oil in a large deep skillet over medium-high heat. Add the pork sausage and brown on both sides, turning the coins once or twice.

    Astuce: If the pan is crowded, brown the sausage in two batches for better color.

    Soften the onion

    Add the onion to the skillet over medium heat with 1/2 tsp salt and a few grinds of black pepper. Stir often, then transfer the sausage and onion to a plate.

    Simmer the vegetables

    Add the potato, green cabbage, and chicken broth to the skillet. Cover and simmer over medium-low heat, stirring once halfway through.

    Astuce: Cut the potato into even cubes so the pieces finish cooking together.

    Finish and serve

    Return the pork sausage and onion to the skillet. Stir in yellow mustard and apple cider vinegar over low heat, then taste and adjust with salt and black pepper before serving.
