  • White rice1.4 cups
  • Shiitake mushroom, stemmed and sliced6 oz
  • Egg1 large
  • Panko breadcrumb0.5 cup
  • Garlic, minced3 cloves
  • Soy sauce3 tbsp
  • Gochujang1 tbsp
  • Sesame oil2 tsp
  • Scallion, thinly sliced2 stalks

Préparation

  1. 1

    Prep the mushrooms

On a cutting board, remove the mushroom stems and slice the caps, mince the garlic, and thinly slice the scallion.

  2. 2

    Cook the rice

Put the white rice and 470 ml water in a covered medium saucepan and simmer over low heat.

    18 min
  3. 3

    Shape the patties

In a mixing bowl, combine the ground beef, egg, panko breadcrumb, garlic, and 1 tbsp soy sauce; shape into four even patties.

    4 min

Astuce: Handle the mixture gently so the patties stay tender.

  4. 4

    Brown the patties

Heat sesame oil in a large skillet over medium heat and cook the patties, turning once.

    12 min

Astuce: Do not press the patties while they cook; pressing releases their juices.

  5. 5

    Cook mushrooms and glaze

Move patties to a plate. Add shiitake mushroom, remaining soy sauce, gochujang, and a splash of water to the skillet; stir over medium heat.

    7 min
  6. 6

    Taste and serve

Serve the patties and mushrooms over rice with scallion on top. Taste and adjust with 1/4 tsp salt and a few grinds of black pepper.
