  • Canned coconut milk1 15 oz can
  • Red curry paste1 tbsp
  • Bok choy, sliced crosswise2 small heads
  • Carrot, cut into thin matchsticks1 medium
  • Fish sauce1 tbsp
  • Lime, cut into wedges1 medium
  • Canola oil1 tbsp

    Prep the ingredients

    On a cutting board, slice the bok choy crosswise, cut the carrot into thin matchsticks, and cut the lime into wedges.

    Soak the noodles

    Place the rice noodles in a large pot and cover with hot water; soak off the heat following the package directions, then drain when pliable but still slightly firm.
