Ingredients

  • Shrimp, peeled and deveined1.25 lb
  • Cannellini bean, drained and rinsed2 15 oz cans
  • Cherry tomato, halved2 cups
  • Garlic, minced4 cloves
  • Shallot, finely chopped1 large
  • White wine1 2 cup
  • Parsley, chopped3 tbsp
  • Lemon, cut into wedges1 small
  • Olive oil2 tbsp
  • Baguette, sliced1 small loaf

    Prep the ingredients

    On a cutting board, peel and devein the shrimp if needed, drain and rinse the beans, halve the tomatoes, mince the garlic, chop the shallot and parsley, and cut the lemon into wedges.

    Toast the baguette

    Place the baguette slices on a baking sheet and toast in a 200°C oven.

    Cook the aromatics

    Heat the olive oil in a large skillet over medium heat. Add the shallot and garlic and stir often.

    Simmer beans and tomatoes

    Add the cherry tomatoes, cannellini beans, and white wine to the skillet. Season with 1/2 tsp salt and 1/4 tsp black pepper; simmer over medium heat.

    Cook the shrimp

    Nestle the shrimp into the skillet and turn once as they cook over medium heat.

    Tip: Take the skillet off the heat as soon as the shrimp turn opaque to avoid a rubbery texture.

    Taste and serve

    Stir in the parsley and squeeze lemon over the skillet. Taste and add up to 1/4 tsp salt and a few grinds of black pepper if needed; serve with toasted baguette.
