Zutaten

  • White rice, rinsed1.5 cups
  • Chickpea, drained and rinsed1 15 oz can
  • Spinach, roughly chopped6 cups
  • Onion, diced1 medium
  • Garlic, minced4 cloves
  • Vegetable broth2.5 cups
  • Lemon, juiced0.5 large
  • Feta cheese, crumbled4 oz
  • Olive oil1.5 tbsp
  • Dill, chopped2 tbsp

Zubereitung

    Prep the ingredients

    Rinse the white rice, drain and rinse the chickpea, chop the spinach and dill, dice the onion, mince the garlic, juice the lemon, and crumble the feta cheese.

    Soften onion and garlic

    Warm the olive oil in a large deep skillet over medium heat. Add the onion and garlic with 1/2 tsp salt and a few grinds of black pepper; stir often.

    Toast the rice

    Add the white rice to the skillet and stir for a minute so the grains are coated with oil and begin to look translucent at the edges.

    Cook the rice

    Pour in the vegetable broth and stir in the chickpea. Bring to a simmer over medium-high heat, cover, reduce to low, and cook without lifting the lid.

    Tipp: Keep the heat low after covering; a hard boil can scorch the bottom before the rice is done.

    Fold in spinach

    Stir the spinach into the skillet over low heat, cover again, and cook.

    Taste and serve

    Stir in the lemon juice and dill, taste, and adjust with salt and black pepper. Sprinkle the feta cheese over the skillet and serve warm.
