On a cutting board, trim the snow pea, drain and slice the water chestnut, thinly slice the scallion, and mince the garlic; pat the shrimp dry.

Combine the jasmine rice and 600 ml water in a medium saucepan over high heat; bring to a boil, cover, then reduce to low heat and cook without stirring.

Take the covered medium saucepan off the heat and let the jasmine rice stand undisturbed.

Cook the shrimp
Heat the canola oil in a large deep skillet over medium-high heat; add the shrimp, season with 1/2 tsp salt and a few grinds of black pepper, and turn once.
