  • Chicken breast, cut into 3 cm pieces1.5 lb
  • Sweet potato, cut into 2 cm cubes1.5 lb
  • Green bean, trimmed12 oz
  • Dijon mustard2 tbsp
  • Maple syrup2 tbsp
  • Olive oil2 tbsp
  • Thyme, measured1 tsp

    Prep the ingredients

    Cut the chicken breast into 3 cm pieces, cube the sweet potato into 2 cm pieces, and trim the green bean; set out the remaining ingredients.

    Start the sweet potatoes

    On a parchment-lined rimmed baking sheet, toss the sweet potato with half the olive oil, 1/2 tsp salt, and a few grinds of black pepper; roast at 220°C.

    Toss the chicken breast and green bean on the baking sheet with the remaining olive oil, dijon mustard, maple syrup, thyme, 1/2 tsp salt, and a few grinds of black pepper; roast at 220°C.
