  • Chickpea, drained and rinsed2 15 oz cans
  • Couscous1.5 cups
  • Carrot, cut into thin half-moons3 medium
  • Onion, diced1 medium
  • Canned diced tomato, with juices1 14.5 oz can
  • Ras el hanout2 tsp
  • Vegetable broth1.75 cups
  • Olive oil2 tbsp
  • Lemon, juiced1 medium
  • Mint, torn0.5 cup

    Drain and rinse chickpeas, cut carrots into thin half-moons, dice the onion, keep the tomatoes with their juices, juice the lemon, and tear the mint leaves.

    Soften the carrots

    Heat olive oil in a large deep skillet over medium heat; add carrots and onion with 1/2 tsp salt and a few grinds of black pepper, stirring often.

    Simmer chickpeas

    Stir in chickpeas, tomatoes with their juices, and ras el hanout; simmer gently over medium-low heat, stirring occasionally.
