Equipment

  • Mixing bowl
  • Loaf pan
  • Rimmed baking sheet
  • Large pot

Method

  1. 1

    Prep the ingredients

Finely dice the onion, beat the egg, chop the parsley, and peel and cut the potato into pieces.

  2. 2

    Mix the meatloaf

Combine the ground beef, ground pork, onion, egg, breadcrumb, dijon mustard, parsley, 1 tsp salt, and a few grinds of black pepper in a mixing bowl; shape into a loaf.

    6 min

Tip: Mix just until combined; working the meat too much can make the loaf dense.

  3. 3

    Bake the meatloaf

Set the loaf in a loaf pan and bake in a 200°C oven; insert a thermometer into the center near the end of cooking.

    45 min

Tip: If the top browns early, loosely cover the loaf pan with foil for the remaining bake.

  4. 4

    Boil the potatoes

Add the potato to a large pot of salted water, bring to a boil over high heat, then simmer over medium heat until tender; drain carefully.

    20 min
  5. 5

    Mash the potatoes

Mash the potato in the pot with the 2% milk and butter; stir in 1/2 tsp salt and a few grinds of black pepper.

    5 min

Tip: Warm the milk first if you want the mash to stay hot and turn out especially smooth.

  6. 6

    Taste and serve

Taste the potatoes and add up to 1/4 tsp salt and a few grinds of black pepper if needed; slice the meatloaf and serve alongside.
