Prep the ingredients
On a cutting board, pat the pork dry, cube the sweet potato, core and wedge the apples, cut the red cabbage into thin wedges, and chop the sage.

Toss the sweet potato and red cabbage with the olive oil on a rimmed baking sheet, spread into a single layer, and roast in a 220°C oven; turn the vegetables once halfway through and season with 1/2 tsp salt and a few grinds of black pepper.

Stir the maple syrup and sage together on the baking sheet, add the apple and pork, and turn the pork to coat it. Roast in the 220°C oven, turning the pork once midway.
