Equipment

  • Large Dutch oven
  • Cutting board
  • Knife

Method

  1. 1

    Brown the pork

Heat the olive oil in a large Dutch oven over medium-high heat. Brown the pork shoulder in batches, turning with tongs, and season with 1/2 tsp salt and black pepper.

    10 min

Tip: Avoid crowding the pot or the pork will steam instead of brown.

  2. 2

    Cook the aromatics

Add the onion and carrot to the Dutch oven over medium heat; stir often, then add the garlic and cumin and stir briefly.

    7 min
  3. 3

    Simmer the stew

Add the black bean, canned diced tomato, chicken broth and orange juice to the Dutch oven. Bring to a boil over high heat, scraping up browned bits.

    4 min
  4. 4

    Tenderize the pork

Cover the Dutch oven and simmer over low heat, stirring every so often. Check the thickest pork piece with an instant-read thermometer.

    40 min

Tip: Keep the simmer gentle; add a splash of broth if the stew gets thicker than you like.

  5. 5

    Taste and serve

Taste the stew and adjust with up to 1/4 tsp salt and more black pepper; ladle into bowls.
