Cuban-Style Black Bean & Sweet Potato Bowls

Method

    Combine the brown rice with 560 ml water in a medium saucepan; bring to a boil over high heat, then cover and reduce to low.

    Keep the medium saucepan covered over low heat without stirring; turn off the burner when the rice has absorbed the liquid.
